Cranberry Goat Cheese Spinach Salad

 

This cranberry goat cheese spinach salad is my go-to salad, especially in the spring and summertime! It’s fresh, healthy, and easy to make! It’s a great lunch meal to prep for your family and gets you ready for the week! Make a big batch without dressing, and just add the dressing as you eat it to last longer. I love a good spinach salad, and feel free to switch up any ingredients if the ones in this are not your favorite. I love to let my chicken marinate for an hour or so in the McCormick Grill Mates Garlic, Herb, and Wine marinade mix, but you can also use any spices you like, pre-marinated chicken or pre-cooked from the grocery store. This helps, especially if you’re short on time! I have been a bit obsessed with the praline pecans from Costco lately, so I have been using those instead of walnuts, and it’s just as delicious, if not more. You can always make homemade dressing, but I use the Briannas Creamy Balsamic Dressing. I love this salad and crave it so often...yum! xo, Chantelle
