Cabo Carajillo

Love this drink….I haven’t stopped daydreaming about my trip to Cabo… and especially this drink that I had at the Nobu restaurant at the Nobu Hotel. We had such a fantastic dinner there. I cannot wait to go back! The Carajillo is a Spanish cocktail typically served with dessert. It’s perfectly sweet and refreshing. I had it for the first time this past weekend when I was in Cabo and had been dying to make it since! It’s made with Licor 43, a sweet Spanish liqueur that is so delicious! All you add is espresso and some garnishes...such an easy drink to make. When served at a restaurant, you serve the espresso separately and pour it over to create a cool layering effect!
